Be Mine Bread

Ingredients/Process:

  • 350 grams flour (white/all-purpose/bob’s red mill)

  • 15 grams coco powder

  • 315 grams water
    —— 1 hour autolyse

  • 70 grams active starter
    —— 30 minute rest

  • 5 grams salt
    —— 5 coil folds (5 hour proof, every hour)

    Filling:

  • 1 bag of chocolate chips
    Shape
    —— 3 hour cold retard

    430 baking, open bake

    ———-

    Frosting:

  • 1 bag of freeze dried strawberries

  • 2 cups of powder sugar

  • 3 TBS. of heavy cream (until desired consistency)

    Drizzle:

  • 1 bag of semi-sweet chocolate chips (remainder of what you didn't use for filling)

  1. Start by mixing the flour, coco, and water. Let it rest for 1 hour.

  2. Add active starter. Mix everything well.

  3. Let the dough rest for 30 minutes before adding salt.

  4. Next, preform a series of stretch and folds or coil folds. To stretch and fold, make sure the dough is in a large bowl. Pull the top of the dough towards yourself and then rotate the bowl (one quarter rotation). Do this four times. To do coil folds, make sure the dough is in a square or rectangle pan/pyrex. Wet your hands and gently pull up on the center. Do this one time every hour.

  5. Next, put the dough on a work surface. Stretch it out and sprinkle chocolate chips (chopped). Fold in the sides like a burrito and roll until you have a cylinder shape.

  6. Next, put the dough in a 8 inch banneton. Let the dough rest in the fridge for 2-3 hours before baking.

  7. Set the oven to 430 degrees F. Add a pizza stone to the oven with a cast iron pan (filled slightly with water). I also like to add a wet towel to the cast iron pan so that steam emerges.

  8. Next, score your bread and place on the hot pre-heated pizza stone. Make sure the pan below has water in it as steam is essential.

  9. Bake fro 20 minutes and then remove pan with steam. Bake another 20 minutes. Remove and place on a wrack, cool for 1 hour before cutting into it.

  10. Mix the icing together by putting the freeze dried strawberries, cream, and powder sugar in a large bowl. Beat with a hand mixer or kitchen aid mixer until it is smooth. Lightly drizzle the top of the bread. Next, met the chocolate chips in a double broiler. Lightly drizzle. Enjoy!
