How to Get a Perfect Score- Hack

Scoring can be really tricky. I have found that high hydration (among several other factors) tends to affect how my scoring turns out. Here are a few simple tricks to ensure a perfect score every time.

Prepare Your Dough

Start by pinching the seams together and pulling the sides towards the center 30 minutes after shaping (make sure your fingers are wet and the dough is stretchy or this won’t work). Stretching and stitching create tension, which is essential for scoring.

I also recommend lightly dusting the loaf with flour (rice flour preferred). This will ensure a beautiful contrast and show the scoring pattern.

Technique

There are a number of ways to score bread, the main thing is that you are cutting deep enough without hurting the structural integrity of the dough.

I also recommend using a 45 degree angle, cutting fast, and always using a sharp blade.

5-7 Minute Trick

If you want to do a fun design on your loaf, try to keep the cuts surface level. Pop the loaf in the oven for 5-7 minutes before doing one final, large, and deep score across the center. This is known as the 5-7 minute trick. Its really helpful in giving your loaf spring and creates a great ear.
