Yummy Sourdough Bagels
I like this sourdough bagel recipe because its super easy and the bagels have great flavor! I hope you enjoy them as much as we did.

Ingredients:
417g bread flour (King Arthur)
242g water
50g leaven or freshly fed starter
10g pink salt
Cooking Water:
2 TBS baking soda
Wide pot for boiling
Method:
Start by dissolving the salt in the water, then mix in the leaven. Add the flour and mix well. The dough will be shaggy. Cover and rest for 1 hour.
After 1 hour, preform a stretch and fold, rest 1 hours (repeat 3x)
After the final stretch and fold, cold proof the dough in the fridge overnight.
In the morning, remove the dough from the fridge and cut into 6 squares. Shape into balls and let them rest for 30 minutes.
Next, poke a hole in the middle and stretch the dough into a bagel shape. Rest in a warm place until dough is puffy. (2-4 hours depending on the temperature).
Preheat the oven to 350 degrees Fahrenheit.
Boil the bagels for 90 seconds on each side. Set on a wire wrack, cool enough to handle.
Coat the bagels in an egg wash and top with favorite topping.
Bake for 15 minutes, or until golden brown and the center is done.
Cool and enjoy!
