Sourdough Waffles + Berry Compote

Yields 12 waffles

I created this recipe for the convenience. Somehow, they are easier than pancakes and very tasty!

1/2 cup starter

2 cups of milk or water

1/2 cup of sugar

1 1/2 cups of flour

Mix these ingredients in a large bowl the night before. Make sure you take 1/4 cup of starter out in the morning before adding the remaining ingredients!

2 eggs

1/2 cup of melted butter or oil

1/4 cup of water

1/2 tsp. of baking soda

1/2 tsp. of salt

1 qrt. of heavy cream

2 cups of frozen mixed berries

1/4 cup of sugar

1/4 cup of water

1 fresh lemon

Strawberry jam

Add the remaining ingredients (eggs, butter, water, soda, and salt) in the morning. Mix well. The consistency should be thin. If necessary add more flour/water to get desired consistency.

Start the berry compote by adding the berries, water, and sugar to a medium saucepan. Cook on medium high until berries are smooth and breakable. Remove from the heat, blend with a blender/food processor/immersion blender. Add the juice of 1 lemon and a pinch of fresh lemon zest.

Beat the whip cream until thick.

Serve waffles with warm berry compote, whip cream and strawberry jam.
